Mass Muscle Building Eating Plans

I lost a lot of weight, fat and muscle. How do I get back muscle without gaining too much weight back?
I started a new loss plan total weight of a couple of months ago. I quit smoking, drink beer, drink sodas, eat bad food and eat much healthier. I started going to the gym time whole. I got around 262, now I'm at 224. When I was in the gym my only concern was to do cardio. I wanted to drop weight fast. Since then I have noticed that I lost muscle mass. When I went to the gym, I would just jump on a stationary bike and ride away. After a while I switched to a cross trainer. I walk for 30 minutes and every five minutes I was going hard for a minute.I lost much weight I wanted, but now I begin to shape me into a lean tone and still lose more weight. I do not want to start gaining weight back, building a lot of muscle. My new training session will be: first start strength training and then of cardio. How much strength training do I do once in a session without going overboard and making my muscles bigger than I want.
