Why the health of men want us to eat so much?

I'm trying to lose weight and build muscle. It seems that when I look at the sample menu, it appears that meals are huge. Can anyone explain how this will help me build lean muscle mass? Hmmm, so if I'm trying to build muscle, but losing fat, I do not get the system of calorie intake. You should not eat fewer calories to lose weight, but eating more calories to gain muscle ??????

I can not speak for the specific menu, as I have not seen, but if you want to build muscle, you need lots of protein to build it with just one more carbohydrates to help support the high level of activity that comes with an exercise regime. Additional: You consume more calories because you (probably) burn them out of the exercise to build muscles.
